\/>\n1 tsp kosher salt<br \/>\n1 tsp black pepper<br \/>\n1 tbls extra virgin olive oil<br \/>\n1 tbls butter<br \/>\n4 cups chicken stock<br \/>\n2 large russet potatoes, peeled and diced<br \/>\n1\/2 cup white wine<br \/>\n1\/2 cup heavy cream<br \/>\n2 tbls creamy Italian dressing<br \/>\n1\/2 cup grated parmesan cheese<br \/>\n1 cup seasoned croutons<br \/>\n1 tbls minced parsley border='0' alt='roasted-garlic-soup\" width=280><\/td>\n<\/tr>\n<\/table>\n<p><strong>INSTRUCTIONS:<\/strong><\/p>\n<div style=\"margin-top:-12px;margin-left:14px;margin-bottom:30px;\">\n<input type=\"checkbox\"> Preheat oven to 400 degrees.<br \/>\n<input type=\"checkbox\"> Cut bases from each garlic bulb and place cut side up on its own 6 inch pieces of aluminum foil.<br \/>\n<input type=\"checkbox\"> Put all three garlic bulbs and drizzle each bulb with a bit of olive oil.<br \/>\n<input type=\"checkbox\"> Close foil around each individual bulb and place them in a small baking dish, roasting for 40 minutes.<br \/>\n<input type=\"checkbox\"> While the garlic is roasting, prepare the soup base.<br \/>\n<input type=\"checkbox\"> Melt butter over medium-high heat in a medium soup pot.<br \/>\n<input type=\"checkbox\"> Remove garlic from oven and partially loosen each foil packet to allow bulbs to cool.<br \/>\n<input type=\"checkbox\"> Add onion, salt and pepper and saut\u00e9 until the onion appears translucent, 2-3 minutes.<br \/>\n<input type=\"checkbox\"> Add wine and Italian dressing and simmer for another 2 minutes.<br \/>\n<input type=\"checkbox\"> Add chicken stock and potatoes.<br \/>\n<input type=\"checkbox\"> Bring the pot to a simmer, reduce heat, cover and keep simmering until potatoes are soft.<br \/>\n<input type=\"checkbox\"> With garlic bulbs now cooled, remove cloves from skins, press and add to soup mixture.<br \/>\n<input type=\"checkbox\"> Using an immersion blender or low-speed electric mixer, blend the soup until it creamy.<br \/>\n<input type=\"checkbox\"> Add cream and parmesan cheese, then season to taste with salt and pepper.<br \/>\n<input type=\"checkbox\"> Serve with croutons and sprinkled parmesan cheese.<br
